Almost every buyer we now ship containers to started here. One sack is the smallest quantity that arrives as a real export consignment, cured on a nominated line, graded, lab-tested, and papered exactly as a container would be, which means the trial actually tells you something about the supplier rather than just about the spice.

It is the right size for an importer validating a new origin, a restaurant group testing a switch across its kitchens, and a distributor who wants to put product in front of two or three customers before committing to a season.

Warehousing whole pods in jute

The jute sack and its food-grade PE liner are a deliberate pair: the liner keeps the pods off the fibre and blocks dust, the jute breathes so the lot is not sealed into whatever humidity it left Kathmandu with. Treat it as breathable and it will hold; treat it as an airtight drum and it will not.

• Store on a pallet or rack, never directly on a concrete floor. Concrete wicks moisture upward and jute will pass it straight to the liner.
• Do not over-wrap the sack in plastic film for long-term storage. It defeats the breathability the packaging was chosen for.
• Cool, dry, dark, and away from anything strongly aromatic. Cardamom takes on neighbouring smells readily, so do not store it next to onions, garlic, or cleaning stock.
• 24 months whole from harvest. The batch code on the sack ties back to the kiln load and the lab report, so a query six months from now is still answerable.
